Gluten-Free Moroccan Style Pilaf

This is one of the recipes I discovered early on that became an easy addition to dinner. My little girl loves dried fruit and to get to have raisins and apricots for dinner is a great treat. It goes very well with fish or chicken. Unfortunately it’s not terribly photogenic so you’ll have to trust me that it tastes way better than this picture makes it look :)



3 1/2 cupwater
1 1/2 cups brown rice (I like basmati)
1 Tablespoon gluten free chicken bouillon powder
1 tsp oil
1 cup onion, diced
1/2 cup driced apricot, sliced
1/2 cup raisins
1/2 tsp cinnamon
1 tsp cumin
1/2 cup dry roasted almonds coarsely chopped

Saute onion in oil over medium heat for 2 minutes.
Add rice, water and chicken bouillon and bring to a boil, reduce heat to medium low, cover and simmer for 15 minutes.
Stir in dried fruit and spices. Re-cover and continue to simmer for 5 minutes. Set aside for 5 minutes before serving. Garnish with almonds.

You should check the rice package for cooking times. Basmati rice takes longer than this recipe says it will take to cook. If you want some extra protein and have leftover chicken it can be added with the rice.
