Paleo Granola

This recipe is amazing. It makes a great snack. It makes a great breakfast. I love it sprinkled on yogourt and over fruit. It packs well and satisfies hunger and that sweet tooth craving we all get. The only downfalls are that it is a bit expensive and it’s very addicting. It’s worse than potato chips could ever be. I have cut back on the oil and sweetener and find that it is just right for me. This recipe is so versatile. I throw in whatever nuts I have on hand, whatever dried fruit I want and it always tastes great.

1 cup sliced almonds
1 cup pumpkin seeds
1/2 cup chopped pecans or sunflower seeds
1/2 cup unsweetened coconut
2 Tablespoons coconut oil
1/2 cup honey
2 Tablespoons sesame seeds
1 Tablespoon cinnamon
1 teaspoon salt
1 cup dried fruit

Combine all ingredients except the dried fruit. Microwave 30 seconds. Mix well.
Bake 300 on parchment lined cookie sheet for 20-25 minutes, stirring occasionally.
Remove from oven and add dried fruit, mixing well.
Cool on cookie sheet and store in and airtight container.
